About leather, Honda Civics in Canada never came with leather from the factory and still don't. It is an EL exclusive.
Buff, about getting leather from the dealer, that is still considered aftermarket. OEM means how a vehicle came from the factory, not how it came from the dealer. So, if you had a problem with that dealer installed leather, the Honda warranty would not apply.
About which car to buy? That is completely up to you but if you are going for an EL, I would go for a previous generation EL with a 5 Speed. However, 5 Speed Premium ELs are a kind of rare. If I had to choose between leather and automatic or no leather and 5 speed, I would go with 5 speed and cloth. The '99-'00 Touring ELs had sunroofs and cloth seats. Personally, that would be the one I would go for if I would buy an EL. Now after saying all of that, I prefer the 6th gen SiR over any EL.
I currently own an SiR and I have owned a '98 EL so, I have experience with both. The EL was automatic (actually bought it for my dad) and I hated it. I've driven the 5 speed EL and the difference was like night and day.

Yes, you caught me. I did mean "Sport". My apologies. Actually '97-'98, the base was just the base with no designation (that's the one I owned). It had steel wheels and dealer installed air conditioning. Heck, it even had a tape deck. It was eventully replaced with a '99 Accord EX, 4 cylinder which got replaced with a '01 3.2 TL.

It is endless debate as to which car to get. It all comes down to what you like. I know decision making is a pain in the ***.
Are you going to soup up the car later? Like all out racing nuts or just some general upgrades? (intake, bars and stereo or whatnot)
If your new car will be a racing machine eventually, then get a 6th gen Hatch with no power windows or nothing, no aftermarket sunroof and just cloth seats and slowly upgrade the parts. If you want the luxury of leather (which is a must in your case) then just go with EL and save the hassle of swapping seats and whatnot.
I wanted luxury in my hatch so I had leather seats and sunroof. Now I am more serious about performance all those aren't matter to me anymore. Sunroof adds dead weight, leather seats are out already and in with the racing seats. So you can say those were a waste of money. But you learn from the hard facts.
