Go to court and go on the stand.
Prosecuter: Did you produce your insurance slip when requested by the officer?
You: No
Judge: Guilty
Bring it with you, make sure it's dated BEFORE you got pulled over. They will give you a little break so that you don't waste the court's time.
Make sure you look around to see if the cop is there, before you make any deals with them. If he doesn't show, it will probably get tossed out.
