If you wanna do a good oil change, start the car for about 2 seconds after you've drained all the oil out. Turn it off and you'll see a lot more oil start to pour out..
as for how much oil.. 3.5-4Litres is usually how much you need depending on how much is actually drained out..
Just fill and check until you hit the second point on the stick. At that point, run the car for about 30 seconds. Wait another like 10-15 seconds and check the oil, it will be lower than the second point.. top it up and your good to go!

if you wanna do that and get all the oil out (pointless) you can disconnect the distributor and just crank the engine over a few times (without firing it). that will also get the rest of the oil out. again, I don't see the point though.

If your care bout taking it all out..
it's not necessary obviously.. but some people are stupid about oil and oil changes.. IE- changing your oil every 3000km, when honda recommends every 12000km. I personally don't do it, I change my oil around 10K when i notice it starts to turn darker.
It's not gonna hurt anything.. You realize how many civic out there running with less than a litre off oil being pushed to redline cuz their owners are too stupid to check the levels...
